Homemade Cheddar Biscuits

Homemade golden cheddar biscuits made from scratch

Buttery, cheesy and tender, these homemade cheddar biscuits are an easy from-scratch addition to just about any meal.

Bake: 400°F for about 20 minutes

Ingredients:

  • 2 cups all-purpose flour

  • 2½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup cold butter, cut into small pieces

  • 1 cup freshly shredded cheddar cheese

  • 1 cup buttermilk

  • 1 large egg

  • 2 teaspoons milk

Instructions:

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.

  3. Add the cold butter. Using a pastry blender or your fingertips, work the butter into the flour mixture until crumbly, with the largest pieces of butter about the size of peas.

  4. Stir in the shredded cheddar cheese.

  5. Add the buttermilk and gently mix just until the dough comes together. Avoid overmixing.

  6. Turn the dough onto a lightly floured surface or a large piece of parchment paper.

  7. Gently press the dough to about ½-inch thick. Fold it into thirds, then press it out again to approximately ½-inch thick.

  8. Cut the dough into rounds using a biscuit or round cookie cutter (press down and do not twist the cookie cutter for fluffy biscuits) Arrange on the prepared baking sheet with the edges of the biscuits just touching.

  9. Gently gather the remaining dough and repeat the pressing, folding and cutting process until all the dough has been used.

  10. Whisk together the egg and 2 teaspoons milk. Brush the mixture over the tops of the biscuits.

  11. Bake for about 20 minutes, or until the biscuits have risen and are golden brown.

Notes:

  • Keep the butter cold for the best biscuit texture.

  • Freshly grated cheddar works particularly well and melts nicely into the biscuits.

  • No biscuit cutter? Cut the dough into squares instead.

  • Mix the dough only until everything comes together. Overmixing can result in tougher, drier biscuits.
