Crispy Peanut Butter Toffee Balls
Crispy, chocolatey and packed with peanut butter and toffee, these little treats are perfect when you want something sweet and easy.
Ingredients:
1 cup crunchy peanut butter
1 tablespoon butter, softened
1 cup powdered sugar
1 (8 oz) package milk chocolate toffee bits, divided
1 cup crisp rice cereal
10 oz milk chocolate, for coating
Instructions:
In a large bowl, beat together the peanut butter and softened butter until smooth and creamy.
Add the powdered sugar and mix until well combined.
Set aside about ⅓ cup of the toffee bits for topping. Gently stir the remaining toffee bits and crisp rice cereal into the peanut butter mixture.
If the mixture is too sticky to handle, refrigerate it briefly until firm enough to shape.
Roll the mixture into approximately 1-inch balls.
Refrigerate for at least 1 hour, or until firm.
Melt the chocolate according to the package directions, either in the microwave or on the stovetop.
Dip each chilled peanut butter ball into the melted chocolate until completely coated. Sprinkle with the reserved toffee bits while the chocolate is still wet.
Place on wax or parchment paper and allow the chocolate to set completely.
