Homemade Chocolate Chip Candied Ginger Cookies
Classic chocolate chip cookies get a delicious twist with bits of sweet, spicy candied ginger in every bite.
Bake: 350°F for 12–15 minutes
Ingredients:
1 lb (2 cups) butter, softened
2½ cups granulated sugar
2 large eggs
1 tablespoon vanilla extract
4½ cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons ground ginger
3 cups chocolate chips or chopped chocolate
¾ cup chopped candied ginger
Powdered sugar, for rolling
Instructions:
Preheat the oven to 350°F and line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and well combined.
Add the eggs and vanilla and mix until smooth.
In a separate bowl, whisk together the flour, baking soda, cinnamon and ground ginger.
Gradually add the dry ingredients to the creamed butter mixture, mixing just until combined.
Fold in the chocolate, nuts and chopped candied ginger.
Roll the dough into balls, then generously coat each one in powdered sugar.
Arrange the cookies on the prepared baking sheets, leaving space between each cookie.
Bake for 12–15 minutes.
Allow the cookies to cool briefly on the baking sheet before transferring them to a wire rack.
