Homemade Freezer French Fries
Skip the bag of store-bought frozen fries and make your own at home with just a few simple ingredients. These homemade freezer French fries are prepped ahead, frozen, and ready to go whenever you need them. Cook them straight from the freezer in the oven or air fryer for an easy, crispy side dish.
Ingredients:
2 pounds russet potatoes
Cold water, for soaking and blanching
Several trays of ice cubes, for the ice bath
Avocado oil (or oil of your choice) spray, for cooking
Salt, to taste
Seasoning of choice, to taste
Instructions:
Scrub and peel the potatoes. Rinse well and pat dry with a clean kitchen towel.
Fill a large bowl with cold water.
Cut the potatoes into approximately ½-inch fries. Place the cut potatoes into the cold water as you work.
Bring a large pot of water to a boil over high heat. While the water heats, fill another large bowl with cold water and plenty of ice.
Working in batches, carefully add the fries to the boiling water. Blanch for 2–5 minutes, or until the insides begin to soften.
Remove the fries from the boiling water and immediately transfer them to the ice water. Let them cool for at least 15 minutes.
Drain the fries and dry them very well with a clean kitchen towel.
Arrange the fries in a single layer on a parchment-lined baking sheet. Freeze for about 1 hour, or until frozen.
Transfer the frozen fries to a freezer-safe bag or container. Store in the freezer for up to 3 months and keep frozen until ready to cook.
Cooking Instructions:
Oven: Preheat the oven to 450°F. Lightly spray a baking sheet with avocado oil spray. Arrange the frozen fries in a single layer and lightly spray the tops with additional oil. Bake for approximately 12–15 minutes, turning halfway through, until golden and crispy. Cooking time may vary depending on the thickness of the fries. Season to taste and serve warm.
Air Fryer: Preheat the air fryer to 400°F. Lightly spray or toss the frozen fries with avocado oil. Place them in the air fryer basket/rack and cook for approximately 15–20 minutes, tossing halfway through, until golden and crispy. Season to taste and serve warm.
