Homemade Baked Chocolate Doughnuts with Vanilla Glaze

Ingredients:

Donuts

  • 1 cup (125 g) all-purpose flour

  • ¼ cup (25 g) cocoa powder

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon kosher salt

  • 4 tablespoons (56 g) unsalted butter, melted and cooled

  • ½ cup (106 g) light brown sugar

  • ½ cup (113 ml) buttermilk, at room temperature

  • 1 egg, at room temperature

  • 1 teaspoon vanilla extract

  • ¼ teaspoon nutmeg, optional

Vanilla Glaze

  • 1 cup (125 g) confectioners' sugar

  • 2 tablespoons milk

  • 1 teaspoon vanilla extract

  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a donut pan with butter or baking spray. Melt the butter and allow it to cool before making the batter.

  2. In a large bowl, whisk together the flour, brown sugar, cocoa powder, nutmeg (if using), baking powder, baking soda and salt.

  3. In a separate bowl, whisk together the buttermilk, egg, melted and cooled butter and vanilla.

  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined and no pockets of flour remain.

  5. Pipe or spoon the batter into the prepared donut pan, filling each cavity about ¾ full.

  6. Bake for 11–13 minutes, until the donuts spring back when lightly touched.

  7. Let the donuts cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. If baking another batch, grease the pan again before adding more batter.

Vanilla Glaze

  1. In a medium bowl, whisk together the confectioners' sugar, milk, vanilla and a pinch of salt until completely smooth.

  2. Dip the cooled donuts into the glaze, then place them on a wire rack, sprinkle with additional toppings if you choose (sprinkles, nuts etc) until the glaze has set.
