Chocolate Chip Oatmeal Cookies
Ingredients:
1 cup unsalted butter, at room temperature
1 cup light brown sugar, packed
½ cup granulated sugar
1 large egg, at room temperature
2 eggs, at room temperature
1 tablespoon pure vanilla extract
2 cups unbleached all-purpose flour
1 cup rolled oats, quick-cooking or old-fashioned
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt OR ¾ teaspoon regular table salt (skip if using salted butter)
3 cups semi-sweet or dark chocolate chips
Instructions:
Preheat oven to 325°F. Line baking sheets with parchment paper or lightly spray with non-stick cooking spray.
In a large bowl, beat the butter, brown sugar and granulated sugar until smooth and creamy.
Add the egg, egg yolk and vanilla. Mix until smooth.
In a separate medium bowl, combine the flour, oats, baking powder, baking soda and salt.
Add the dry ingredients to the butter mixture and mix just until completely incorporated. Do not overmix.
Fold in the chocolate chips until evenly distributed.
Drop spoonfuls of cookie dough onto the prepared baking sheets, spacing them about 1½–2 inches apart.
Bake on the middle rack for 12–17 minutes, depending on the size of the cookies. They’re ready when they’re lightly golden with slightly darker edges.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
