Homemade “Nutri-grain” Bars

Soft, homemade fruit-filled bars made with whole wheat flour and oats. Fill them with your favourite jam — raspberry is especially good.

INGREDIENTS:

  • 1 cup whole wheat flour

  • ¾ cup old-fashioned oats

  • ¼ tsp cinnamon

  • ¼ tsp salt

  • 6 tbsp cold butter, grated

  • 2 egg yolks

  • 2 tbsp plain Greek yogurt

  • 2 tbsp honey

  • 2 tsp vanilla

  • 1 cup jam of choice

INSTRUCTIONS:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. Mix the flour, oats, cinnamon and salt. Add the grated cold butter and mix until crumbly.

  3. Add the egg yolks, honey and vanilla and mix to combine. Add cold water, 1 tablespoon at a time if needed, until the dough comes together into a ball.

  4. Turn the dough onto a lightly floured surface and roll into a large square. Cut into 9 even squares.

  5. Place about 1 heaping tablespoon of jam on one side of each square, leaving the edges clear. Brush the edges with milk, fold the dough over the filling and press the edges to seal.

  6. Brush the tops lightly with milk and bake for 15–20 minutes, or until golden brown.

NOTES:

Use whatever jam you like — raspberry, strawberry, blueberry or apricot would all work. Applesauce could also be used as a filling.
