Cheesy Pepperoni Pizza Muffins
These cheesy pepperoni pizza muffins have all the flavours of pizza baked into a fun, handheld muffin. Loaded with pepperoni and plenty of melty cheese, they’re an easy homemade option for lunches, snacks, or a quick family meal.
Prep Time: 10 minutes
Cook Time: 15–20 minutes
Total Time: 30 minutes
Yield: 12 muffins
Ingredients:
1½ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
1 cup shredded mozzarella cheese
1 cup pepperoni slices, roughly chopped
1 large egg
1 cup milk
¼ cup olive oil
1 cup marinara sauce, for serving or you can mix into the batter for more flavour which is what I do
Instructions:
Preheat the oven to 375°F. Lightly grease a 12-cup muffin tin and set aside.
In a large bowl, whisk together the flour, baking powder, garlic powder, onion powder, and salt.
Add the shredded mozzarella and chopped pepperoni and stir until evenly distributed throughout the flour mixture.
In a separate bowl, whisk together the egg, milk, and olive oil and marinara sauce if including in the batter.
Pour the wet ingredients into the dry ingredients and gently stir just until combined. Be careful not to overmix the batter.
Divide the batter evenly between the prepared muffin cups, filling each about ¾ full.
Bake for 15–20 minutes, or until the tops are lightly golden and a toothpick inserted into the centre of a muffin comes out clean.
Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
Serve warm with extra marinara sauce for dipping.
Notes:
Make them your own by adding some of your favourite pizza toppings. Just be careful not to overload the batter with too many additions.
For even more pizza flavour, add a little dried Italian seasoning or oregano to the batter.
These muffins are great for meal prep and lunchboxes. Once completely cooled, store them in an airtight container or freeze for up to 2 months.
For soft, fluffy muffins, mix the wet and dry ingredients only until combined. Overmixing can make the muffins dense instead of tender.
